Quick and Easy Healthy Recipes That’ll Make You Go, “Yum!”

I’ve put together a list of crazy good healthy recipes for you guys that literally take no time at all. I’m not going to lie. I do not like to cook. I just don’t have time for it.

But these recipes I’m about to share are seriously good, y’all! Some are my own that I’ve perfected over the years, and the rest are from my trusty, best pal Pinterest.

So without further ado, here are some scrumdiddlyumptious, and oh so healthy recipes that you’ll definitely want to pin. I’m not kidding. Pin them. You can thank me later.

Quinoa

Quinoa, quinoa, quinoa. Oh, sweet quinoa! For the last year or so, I’ve been having a love affair with these dear sweet little seeds.

These babies are packed with protein, B vitamins, and dietary minerals. So, ditch the rice.

Did I mention you can literally put them in anything? And the best part is that they’re easy to make!

5-Minute Breakfast Quinoa
This easy recipe is absolutely delicious! I use unsweetened coconut milk instead of almond milk, but that’s just my personal preference. I also add dried bananas for a little bit of added crunch.

Kale Quinoa Salad with Blueberries
This salad is amazing, and I love that the dressing is easy to make. Total winner!

Alternative Option: I usually swap out the kale for spinach. I’m not a big kale fan. I just don’t like the texture. Texture is a deal-breaker with me. I’m weird that way.

OMG! I love this stuff. It tastes just like pumpkin pie, and this easy recipe only takes a few minutes to throw this dish together.

Rice Cakes with Peanut Butter and Bananas
This one’s a no brainer. Grab a low-sodium plain rice cake (the large ones) and spread a thin layer of peanut butter.

Low-sodium, low-sugar, all-natural peanut butter would be best. Otherwise, use whatever you’ve got. Then top with some banana slices. And if you’re feeling cheeky, sprinkle some chia seeds over the top. And you’re good to go!

Smoothies and Protein Shakes

Protein powders have come a long way. Gone are the days of choking down a nasty, lumpy protein powder concoction. Nowadays there are so many options on the market.

After a workout, just throw a scoop of your favorite brand in one of these yummy smoothie recipes to give your muscles some love. Here are a few of my favorite go-to recipes.

However, if protein powder just isn’t your bag, feel free to leave it out. These smoothies are delish with or without it.

Superfood Smoothie Boosters

Add any or all of these super seeds to your smoothie for an added boost of healthiness.

  • Chia seeds – they’re high in Omega-3 fatty acids, fiber to help you stay fuller for longer, and have a decent amount of protein to boot. They’re high in vitamins and minerals. So, yeah. Enough said. Add them to your smoothie already!
  • Hemp Seeds – they’re packed with plant-based protein and rich in Omega-6 and Omega-3 fatty acids plus vitamins and minerals.
  • Flax Seeds – also rich in Omega-3 fatty acids and fiber. And can improve digestive health, lower blood pressure, and bad cholesterol.

I just buy a huge canister that has all three of these bad boys combined. I like to make things easy on myself. So just sprinkle a few or add a tablespoon, but don’t go overboard. If you use too much, it can do a number on your tummy. Use sparingly. You’ve been warned.

Pineapple Ginger Smoothie
I swap out the orange juice for Bai coconut flavored water. And sometimes I’ll leave out the spinach and add coconut vanilla Greek yogurt and protein powder. I like to switch things up. Keep it fresh. That’s just how I roll.

Coffee Protein Breakfast Shake
This recipe is all my own, but I got the idea years ago from ZuzkaLight way before I had ever heard of bulletproof coffee. I’ve tweaked it a bit and here’s my own take on it.

  • 1 cup brewed coffee
  • 1 tablespoon of coconut oil
  • 1 scoop of chocolate protein powder (You can use vanilla or cookies & cream instead if you’re not a fan of the chocolate.)
  • ¼ teaspoon of unsweetened cacao powder
  • 1 packet of Truvia
  • a dash of cinnamon (Sometimes I even use pumpkin spice.)
  • a splash of low-fat cow’s milk (Feel free to use almond, soy, or coconut milk. For whatever reason, coffee just never tastes right to me with them. It’s the only time I use cow’s milk, though. I prefer coconut milk in all smoothies, protein shakes, and other dishes.)

Optional: In most bulletproof coffee recipes they also add butter. So, you can add 1 tablespoon of butter (preferably grass-fed) if you’d like.

Now throw it all in a blender smooth, and you’ve got yourself a frothy boost of ‘hell yeah, I’m ready to take on the day’ cup of goodness!

Blueberry Coconut Protein Smoothie
The recipe is mine, but Kristine’s Kitchen also has a delicious Blueberry Spinach Breakfast Smoothie recipe if you want another option.

  • 1 scoop of vanilla protein powder (or cookies & cream protein powder)
  • ½ cup fresh spinach
  • ½ banana
  • ½ cup frozen blueberries
  • ⅓ cup coconut-flavored Greek yogurt (I use Dannon’s Light & Fit coconut vanilla yogurt.)
  • ⅓ cup unsweetened coconut or almond milk (your choice)
  • Top it off with coconut flavored water to the fill line (I use Bai coconut water.)

Now, blend until smooth. And there you go.

Turkey Burgers
I use this easy recipe as a base. I also add some siracha sauce and a bunch of chopped veggies like spinach, zucchini, red peppers, and jalapenos. And remember that canister of flax, hemp, and chia seeds I mentioned earlier that I add to my smoothies? The trifecta? Well, I add a tablespoon of those too.

Sometimes I like to get crazy and add some cooked quinoa into the mix too. I know. I know. I’m obsessed. But it’s sooo good!

Chicken Taco Lettuce Wraps
The only substitution I make with this recipe is that I don’t use taco seasoning. I make my own mix with cumin, chili powder, and cayenne powder. Other than that, I leave it as is. And it’s glorious!

Easy Shrimp Tacos
This recipe is so simple, even I can’t screw them up. At least I haven’t yet. Sauté some peeled shrimp, seasoned however you like it. I use a dash of EVOO, a ¼ teaspoon of minced garlic, and a mixture of cumin, chili powder, and cayenne pepper.

You can eyeball the seasoning, depending on how spicy your taste buds are. Then take a soft flour taco shell, fill it with some pre-cut coleslaw mix, spinach, and shrimp. And bam! I’m done, baby! Easy peasy.

If you want to get a little fancier, I’ve also included a recipe from Peas and Crayons that I’ve tried. I leave off the Ranch dressing, but it is definitely another delicious option.
